Recipe: No-Bake Nutty Energy Bites

These soft, chewy energy balls are packed with natural goodness from nuts, seeds, oats, and dates. Easy to make in minutes with no baking required, they’re perfect for a quick snack, post-workout boost, or a smart on-the-go bite — all with zero refined sugar.


Ingredients

For about 12 energy bites:

  • 1 cup rolled oats

  • 1/2 cup almonds or mixed nuts

  • 1/3 cup natural peanut butter or almond butter

  • 8 Medjool dates, pitted

  • 1 tbsp chia seeds or flaxseeds

  • 1/2 tsp cinnamon

  • 1/4 tsp sea salt

  • 1 tsp vanilla extract

  • 1–2 tbsp water (only if mixture is dry)


Instructions

  1. Blend & Pulse:

    • In a food processor, pulse oats and nuts until crumbly.

    • Add dates, nut butter, chia seeds, cinnamon, salt, and vanilla.

    • Blend until sticky and well combined. Add 1 tbsp water if needed for texture.

  2. Shape into Balls:

    • Scoop out mixture and roll into bite-sized balls using your hands.

    • Place on a tray or in a container and refrigerate for at least 20 minutes to set.

  3. Store & Enjoy:

    • Keep refrigerated for up to 1 week or freeze for longer shelf life.
