Ingredients
- 1 cup rolled oats (100g)
- 1/2 cup almond butter (125g)
- 1/4 cup honey or maple syrup (60ml)
- 2 tablespoons chia seeds (soaked in 4 tablespoons of water for at least 20 minutes)
- 1/4 cup shredded coconut (optional)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon (optional)
- 1/2 mashed banana or 1/4 cup fresh berries (optional)
Instructions
1. Prepare the Chia Gel:
- In a small bowl, mix chia seeds with 4 tablespoons of water.
- Let sit for at least 20 minutes, stirring occasionally, until a gel-like consistency forms.
2. Mix the Ingredients:
- In a large mixing bowl, combine the oats, almond butter, honey, vanilla extract, cinnamon, and the pre-soaked chia gel.
- Stir well until all ingredients are evenly incorporated.
- If using, fold in the mashed banana or fresh berries for extra flavor and nutrition.
- Add the shredded coconut if desired.
3. Shape the Energy Bites:
- Use a tablespoon or small scoop to portion the mixture.
- Roll into bite-sized balls using your hands.
4. Chill & Enjoy:
- Place the energy bites on a tray lined with parchment paper.
