    A nutritious, no-bake snack that combines healthy fats, fiber, and protein for sustained energy. These Chia & Almond Energy Bites are perfect for an afternoon snack, pre-workout fuel, or a quick on-the-go bite.

    For an extra burst of flavor and nutrients, you can also add mashed banana or fresh berries to the mixture for natural sweetness and an antioxidant boost.


    Ingredients

    • 1 cup rolled oats (100g)
    • 1/2 cup almond butter (125g)
    • 1/4 cup honey or maple syrup (60ml)
    • 2 tablespoons chia seeds (soaked in 4 tablespoons of water for at least 20 minutes)
    • 1/4 cup shredded coconut (optional)
    • 1/2 teaspoon vanilla extract
    • 1/4 teaspoon cinnamon (optional)
    • 1/2 mashed banana or 1/4 cup fresh berries (optional)

    Instructions

    1. Prepare the Chia Gel:

    • In a small bowl, mix chia seeds with 4 tablespoons of water.
    • Let sit for at least 20 minutes, stirring occasionally, until a gel-like consistency forms.

    2. Mix the Ingredients:

    • In a large mixing bowl, combine the oats, almond butter, honey, vanilla extract, cinnamon, and the pre-soaked chia gel.
    • Stir well until all ingredients are evenly incorporated.
    • If using, fold in the mashed banana or fresh berries for extra flavor and nutrition.
    • Add the shredded coconut if desired.

    3. Shape the Energy Bites:

    • Use a tablespoon or small scoop to portion the mixture.
    • Roll into bite-sized balls using your hands.

    4. Chill & Enjoy:

    • Place the energy bites on a tray lined with parchment paper.
    • Refrigerate for at least 30 minutes to firm up.
