Salmon Tartare with Avocado, Mango & Beetroot Layers

A modern twist on the classic tartare — this elegant layered dish combines creamy avocado, tangy mango, earthy beetroot, and citrus-marinated salmon, topped with truffle mushrooms and delicate blossoms. Perfect as a starter or light gourmet main course. 

Ingredients (Serves 2)

Base Layers:

  • 1 ripe avocado (diced)
  • ½ small beetroot (thinly sliced)
  • ½ ripe mango (diced)
  • 150g fresh sushi-grade salmon (cubed)

Marinade for Salmon:

  • Juice of ½ lemon
  • Lemon zest (½ tsp)
  • Pinch of sea salt
  • White pepper (to taste)
  • 1 tbsp finely chopped chives

Garnish:

  • 3–4 truffle mushroom slices
  • 1 tsp caper seeds
  • 3–4 edible blossoms
  • 2 chive stalks
  • 2 tsp parsley oil (or basil oil)

Instructions

  1. Marinate the Salmon:
    Combine salmon cubes with lemon juice, zest, salt, pepper, and chopped chives. Let it sit while you prepare the layers.
  2. Layer the Tartare:
    Place a metal ring mold in the center of a plate.
    • First layer: diced avocado (smooth with a spoon).
    • Second: thin beetroot slices.
    • Third: cubed mango.
    • Top: marinated salmon (flatten surface).
  3. Garnish & Plate:
    Carefully lift the ring. Top with truffle slices, capers, blossoms, and chives. Finish with drops of parsley oil around and over the tartare.
  4. Serve & Enjoy:
    Best served chilled with a spoon. Light, flavorful, and visually stunning.
